The story of Allos began in the 1970s, when Walter Lang made his dream of a self-supporting farm come true. It started as a small self-supporting farm, where everything was made by hand, and has developed into an international company.
Amaranth is not only one of the oldest cultivated crops in the world, it is also designated a "miracle grain" by nutrition experts, since it is a convincing combination of a delicate, nutty flavour and exceptional nutrient levels: it contains considerably more protein than other types of grain. At the same time, its unusually high proportion of the essential amino acid lysine makes amaranth protein particularly valuable. A particularity of amaranth is that it is gluten-free.
Popping is the oldest method of preparation for amaranth. With our special popping procedure, the ingredients are gently opened. Carbohydrates and proteins in particular are easier to digest after this procedure.
The Allos popping procedure is a very gentle method, during which the small granules are popped in only a few seconds. Our research studies on the content of tender and essential amino acids before and after the popping process show clearly that these ingredients are not destroyed during the process.
The amaranth seed has a nut-like, typical and clearly vegetable, often strong smell and taste. This is due to the harvesting conditions. The amaranth plant does not die after grain maturity, it remains green. When the seeds are threshed out of the flower umbels, that can be up to one metre long, the granules on the sieves come in contact with leaf pieces and leaked plant sap may stick to them. After being threshed out the seeds are dried whereby the sap stays stuck to the seeds. It gives the seeds a slightly bitter scent. The more plant sap sticks to the seed, the more intensive the vegetable smell and taste can be.
We recommend a cool and dry storage of the products, so the natural taste of the amaranth is not too dominant.
Allos sources the amaranth from the mountain regions in Peru and India - from certified organic cultivation of course.
As amaranth is a plant that needs a certain consistent length of day for it to grow and mature, which can mainly be found in the equatorial regions, amaranth is hardly cultivated in Germany.
Since 2013, Allos has supported the cultivation of amaranth in south Germany and has fostered the cultivation of the plant in cooperation with organic farmers.
The amaranth grain is fused with its edible and high-fibre seed coat and the seedling, so it is ground and popped as a whole. We always process the entire amaranth grain in our products.
Amaranth does not contain the two proteins gliadin and glutenin. If amaranth is processed without and the addition of any cereals it is suitable for a gluten-free diet. Of course, you should not use or mix it with other cereals; otherwise, it is no longer gluten-free.
In comparison to all other cereals, amaranth is very well suitable for the preparation for infants starting to eat solid food. In order to guarantee a balanced diet, it can be used as substitute for or in combination with oat flakes or other grain types. You can easily prepare mashed fruits and vegetables especially with Allos Amaranth Poppcorn. Just mix the poppcorn into the mashed or finely chopped fruits.
Unripe spelt grain is the seed of spelt. The seed is harvested when half mature and is artificially dried immediately after.
Curcuma belongs to the Ginger plant family. Curcuma mainly originates from South and Southeast Asia and occasionally from North Australia.

As we at the Allos Hof-Manufaktur do without any preservatives, the fruit spreads have a limited durability after being opened. In order to prolong the durability, we recommend that you use clean cutlery with the fruit spreads and to store them in a cool place. Like other products, the fruit spread should be consumed within a few days after opening.

In conclusion, the difference between conventional and organic beekeeping is the way the beekeeper operates/maintains his beekeeping. Taking care of the bees is much more time-consuming in ecological beekeeping, which of course affects the price of the product.
