Amaranth Crêpes

Serves four

125 g wholemeal flour
1 cup of whole milk
2–3 tbsp honey (e.g. Allos acacia honey)
2 eggs
4 tbsp Allos amaranth and honey poppies
3 tbsp Allos amaranth popcorn
4 tbsp Allos Frucht Pur strawberry (alternatively: Allos Frucht Pur sour cherry)
Juice of half a lemon
1 tub of natural yogurt (125 ml)

Mix the flour, milk, honey and eggs to form a batter. Fold in the amaranth and honey poppies and the amaranth popcorn. Heat a little oil or butter in a pan. Separate the batter into portions, spread them out evenly in the pan and gently fry on both sides until they turn golden. To make the sauce, mix the lemon juice with the Frucht Pur strawberry. Serve with stirred natural yogurt.
